Fresh Fruit Cobbler
 
3 cups fresh fruit (blueberries, strawberries, peaches, etc.), or enough to cover bottom of baking dish 1-inch deep
1 cup all-purpose flour
2 teaspoons baking powder
1 cup granulated sugar
2 eggs, beaten
3/4 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon grated fresh lemon rind (optional)
Preheat oven to 375¡ÆF. Wash, peel and slice fruit as necessary for bite-sized pieces. In a medium mixing bowl, sift together flour, baking powder and sugar. Add liquid ingredients and grated lemon rind. Mix with a wire whisk until batter is smooth. Place fruit in the bottom of an 8-inch square glass baking dish in a 1-inch deep layer. Pour batter over fruit and Cook at Convection (375¡ÆF) for 45 to 55 minutes. Microwave at Power 7 for 10 minutes, or until toothpick inserted in the center comes out clean. Allow to stand for 10 minutes before serving.
