Broccoli with Hollandaise Sauce
1 1/2 pound broccoli, cut into 4-inch pieces
1 Tablespoon water
Holladaise sauce
3 egg yolks
1 Tablespoon fresh lemon juice
1/8 teaspoon white pepper
2/3 cup butter
Pimento strips
Lemon wedges
Arrange broccoli in a 10-inch micropoof baking dish with florets toward center of dish. Ass water. Cover with vented plastic wrap. Microwave at Power hi for 8 to 10 minutes, or until broccoli is tender. Drain. Cover to keep warm. Set aside. In medium microproof bowl, blend egg yolks, lemon juice and white pepper with a wire whisk. Set aside. Place butter in a 2-cup glass measure. Microwave at Power Hi for 2 minutes, or until butter melts. Add butter to egg mixture in a steady stream, stirring constantly with whisk. Microwave at Power 5 for 1 1/2 to 2 minutes, or until Thickened, stirring every 30 seconds with whisk. Pour over broccoli. Garnish with pimento strips and lemon wedges.
