Hoisin Chicken with Walnuts and Red Pepper
 
Marinade
1 Tablespoon vegetable oil
2 Tablespoons soy sauce
1 Tablespoon dry sherry
1/4 teaspoon dried, crushed red pepper flakes
1 clove garlic minced
Chicken
2 skinless, boneless whole chicken breasts, cut into 2-inch by 3/4-inch chunks
6 scallions, cut into 1-inch lengths
1/2 cup walnut halves
1 medium red pepper, thinly sliced
1/3 cup Horisin sauce
Hot cooked rice
In small mixing bowl, blend all marinade ingredients. Gently stir in chicken to coat. Cover and refrigerate 30 minutes. Preheat 10-invch browning dish at power Hi for 6 to 7 minutes. Quickly stir in chicken pieces and marinade, scallions, walnuts and red pepper. Stir until sizzling stops. Microwave, uncovered, at Power Hi for 5 to 6 minutes, or until chicken is no longer pink, stirring every 2 minutes. Stir Hoisin sauce into chicken mixture. Serve over rice.
