Quiche Dijon




			1 9-inch pre-baked pie shell

			6 slices bacon

			1 Tablespoon butter

			1/4 cup diced red bell pepper

			1/4 cup diced green bell pepper

			1 1/2cup half and half

			4 eggs

			2 teaspoons Dijon mustsrd

			1/2 teaspoon salt

			1/4 teaspoon white pepper

			1 cup grated Swiss cheese

Place bacon between layers of paper towels on roasting rack. Place on turntable. Microwave at power Hi for 4 to 5 minutes. Cool. Cut into 1/2-inch pieces. In a 1-cup glass measure, combine butter and diced peppers. Microwave at Power Hi for 2 to 3 minutes. In a medium-sized mixing bowl, combine half and half, eggs, mustard, salt and pepper. Beat with a wire whisk to blend. In the bottom of the pre-baked pie shell, layer bacon, Swiss cheese and peppers. Pour egg mixture into shell. Preheat oven to 325¡ÆF. Place filled pie shell on turntable with metal rack in place. Cook at Convection(325¡ÆF) for 40 to 45 minutes, or until custard is set.
