Open-Face Antipasto Melts
 
2 thin slices red onion, separated into rings
1 cup thinly sliced mushrooms
4 thin slices green bell pepper, cut in halves
2 radishes, thinly sliced
1/4 cup Italian salad dressing
1 12-inch loaf French bread
1/4 cup mayonnaise
8 ounce sliced salami, bologna, turkey, roast beef or ham
6 sliced tomato
1/2 cup alfalfa sprouts
4 (1 1/2-ounce slices) mozzarella or Swiss cheese
In small mixing bowl combine onion, mushrooms, green pepper and radishes. Stir in Italian salad dressing. Set aside to marinate for 15 to 20 minutes. Drain vegetables and set aside. Discard marinade. Cut French loaf an half lengthwise. Spread mayonnaise on each bread half. Top each half with combination of sliced meat, tomato, marinated vegetables, alfalfa sprouts and single layer of cheese. Place on roasting rack. Microwave at Power 7 for 6 to 7 minutes, or until cheese melts, rotating rack halfway through cooking cycle.
