Quiche
For the pastry
250 gms. plain flour
150 gms. Salted butter (softened)
2 eggs
For the filling
125 gms. Onions (finely chopped)
400 gms. Mushrooms
1 tsp. pepper powder
Salt to taste
200 gms. Cream
100 gms capsicums (finely chopped)
100 gms processed cheese (grated)
2 eggs
4 tbsp. butter

Mash the softened butter, till smooth.

Add the eggs and beat well
3.
Sieve the flour and add to the mixture. Knead into a dough. Cover and refrigerate for 1 hour. Then knead again.

Divide the dough into 2 portions and roll out each portion, on a lightly floured surface, into a circle.
5.
Line a tart dish with the pastry, pressing well to seal the sides. Refrigerate for 10-15 min. Press the pastry down again to bring it up from the sides.
To make the filling
1.
Heat better, in a 1 litre dish on 100%power for 30 sec. Add the onions and microwave, on 100% power for 8 min. Stir twice during cooking.

Add the mushrooms, mix and microwave 0n 100% power for 4:30 min. Stir twice during cooking
3.
Stir in the capsicum. Mix well. Microwave on 80% power for 3 min.
4.
Add the salt and pepper powder. Mix well. Allow to cool slightly.
5.
Beat well the eggs and cream. Add salt and pepper to taste and beat again, till thick.
To make the quiche
1.
Spread the filling evenly over the pastry.
2.
Top with the egg and cream mixture.
3.
Sprinkle with grated cheese.
4.
Preheat the oven on 'convection' at 250¨¬C.
5.
Bake the quiche at 250¨¬C, placed on low rack for 25 min.
