Panchratan Dal
 
50 gms arhar/ toor dal
50 gms urad dal
50 gms moong dal
50 gms chana dal
50 gms masoor dal
750 ml water
125 gms onions (thinly sliced)
4 flakes garlic (finely chopped)
1" piece ginger (finely chopped)
2 green chillies (finely chopped)
1 tsp. cumin seeds
1/4 tsp. asafetida
1/4 tsp. turmeric powder
sat to taste
100 gms tomtoes (chopped)
1 tsp. red chilli powder
3/4 tsp. garam masala powder
3/4 tsp. coriander powder
1 tbsp. coriander leaves (finely chopped)
juice of 1 lemon
1 tbsp. desi ghee
1. Mix the dals,. Wash and soak for an hour. Drain
2. Boil the dals, with salt, turmeric powder and water, 0n 100% power for 8 minutes.
3. Reduce the power level to 80% and microwave partially covered, fo 20 minutes. Stir once or twice during cooking.
4. Allow to stand covered for 10 minutes.
5. Heat ghee, in a 2 litre deep dish, on 100% power for 40 seconds. Add the asafetida, cumin seeds, ginger and garlic and microwave on 100% power for 1 minute.
6. Add the onions and green chillies and microwave on 100% power for 4 minutes, till tender. Stir once during cooking.
7. Add the red chilli powder, garam masala powder, coriander powder and tomatoes and microwave 0n 100% power for 2 minutes. Mix
8. Add the biled pulses. Mix and microwave on 100% powder for 4 minutes
9. Allow to stand, covered for 8-10 minutes.
10. Garnish with coriander leaves and sprinkle with lemon juice, if desired.
11. Serve hot with rice or chapatis.
